Theiner's Garden is nestled between the estate's own apple orchards, a blooming garden, and the impressive panorama of the South Tyrolean mountains. The view stretches across the fruit-growing landscape to the peaks surrounding Bolzano, creating the feeling of escaping everyday life from the moment you arrive.
The family-run hotel was born from a conviction that has guided the Theiner family for generations. With their own farm, apple orchards, and organic food store, a conscious approach to nature, food, and resources has always been part of their daily lives. The desire to create a place where sustainability and organic quality are consistently paramount eventually led to the idea of their own organic retreat. In 2009, this vision became a reality. Today, Ingo Theiner continues to run the hotel in the second generation, carrying on the original philosophy with the same passion.
The hotel was built on a former nectarine orchard belonging to the family and was planned from the outset as a holistically sustainable place. The architecture is timeless and minimalist, characterized by solid wood, natural materials, and light-filled rooms. The rooms, especially those free from electromagnetic radiation and furnished with Swiss pine furniture, create a tranquil atmosphere and promote restful sleep.
With 57 rooms, Theiner's Garten remains deliberately manageable and personal. Guests will find space here for peace, activity and enjoyment – be it through yoga, guided hikes, relaxing hours by the pool or excursions to Merano, Bolzano and the surrounding mountains.

The hotel was built according to ecological building principles, with a large proportion of the materials used being recyclable. Instead of synthetic solutions, natural building materials such as wood wool for insulation were used. Wood shapes the entire look – from the rooms to the furnishings. Only local wood species such as Swiss pine, larch, and spruce, all sourced from South Tyrol, were used. In general, great care was taken to use regional materials whenever possible and to collaborate with local craftspeople. The dining tables in the hotel are particularly personal: they were crafted from old apple trees on the family farm and thus tell a part of the Theiner family's story.
The cuisine at Theiner's Garten follows a clear principle: everything served is organic. Slow Food and farm-to-table principles form the basis of the culinary concept. Many ingredients come directly from the hotel's own surroundings: from the vegetable and herb garden on the terrace or from the hotel's own Bergerhof farm. What grows there often goes straight to the plate. The menu is complemented by select products from organic farmers in the region.
The majority of the team comes from the immediate vicinity, while dedicated staff rooms are available for employees who travel from further afield. As a member of the Biohotels group, employees also benefit from special perks, including discounted stays at other Biohotels. Beyond its hotel operations, the establishment is also committed to social responsibility: a portion of the proceeds from every water carafe sold is donated to well-building projects in Africa.
The hotel is powered by 100% renewable energy, a large portion of which comes directly from its own solar panels. Bed linens, cleaning products, toiletries, and hotel soaps meet organic standards. Where possible, goods are purchased unpackaged, waste is minimized, and resources are used consciously – from conserving light to changing towels and bed linens only upon guest request. This concept is complemented by a PVC-free pool, electric vehicle charging stations, rental e-bikes, and the adjacent biodynamic farm. Certifications such as GSTC, Climate Hotel, and the recommendation by Demeter as the first hotel in Italy underscore the holistic approach, which is visible and tangible throughout the entire property.
The hotel's spacious spa area spans approximately 1,000 square meters and offers ample space for relaxation and rejuvenation. Various saunas, a cold plunge pool, and a Kneipp therapy area provide welcome variety and promote holistic well-being. The offerings are complemented by a heated indoor and outdoor pool, which can be enjoyed year-round. For additional relaxation, massages and cosmetic treatments are available, tailored to each guest's individual needs. Exercise and mindfulness also play a key role: yoga sessions are offered several times a week, along with stretch and relaxation classes, guided meditations, and aqua aerobics in the warm pool.
