La Subida

Cormons , Friuli, Italy

On the border of Italy and Slovenia, the Sirk family has created a country resort where tradition meets comfort, modern architecture meets pristine nature, and guests from all over the world can sit comfortably with local Friulans over a glass of wine.

In the middle of the mixed forests in which the property is located, the Sirk family built the guest houses of their country resort with a lot of imagination, love for nature and playful pleasure. The first houses “della Nonna” were built in the 80s based on the model of a small farming settlement with whitewashed walls and warm terracotta or wooden floors.

On the top of the hill are the newer Case del Bosco with a direct view of the tree tops, and if you feel like it, you can also spend a night in a four-poster bed on the hayloft in la Subida or enjoy a cozy bath in the bath between tall grass.

A beautiful swimming pool also invites you to swim, and shorter and longer hiking trails lead through the forest and vineyards for walking and cycling. The heart of Subida, however, is the family home, where the reception and the “Trattoria al Cacciatore” are located. There are traditional dishes from the Italian, Slovenian and Friulan cuisine, which are prepared with great attention to detail from regional products.

Father Sirk personally produces the in-house Sirk vinegar with great patience and care from organically grown, unsulphurized grapes from his own vineyards. The care of the vineyards is carried out by free-range geese, who enjoyably keep the weeds at bay and also contribute the best natural fertilizers.

With all demands on high-quality equipment and quality, it is particularly important to the Sirks to maintain a family atmosphere and traditional down-to-earthness on La Subida, which enables genuine relaxation in the midst of the original nature.

Sustainable

ArchitectureThe buildings of the property are built with traditional materials from the region. The newer houses were built up to 100% from natural wood. They are designed with the greatest love of nature in mind, but with a very modern design and equipment. For example, there is the Case del Bosco, whose rooms have only three walls. The fourth is made entirely of glass and offers a wonderful view of the light mixed forest in front of it. Or the Kosovci, which was modeled on a classic Slovak barn and was converted here in Subida into a state-of-the-art holiday apartment built with organic wood. Also in the interior design and furnishings, a lot of playful joy in the connection of opposites can be seen in all accommodations. For example, a modern free-standing bathtub can be placed directly next to an original farm bed or an apartment in the vinegar press room turns out to be a minimalist furnished luxury accommodation with a private sauna and open-air spa.

FoodWhen it comes to the food used in the trattoria and osteria, strict attention is paid to the use of regional ingredients. In the region of the Collio there are still a lot of small farms with traditional cultivation on the Italian as well as on the Slovenian side, from which almost all necessary food can be procured.

La Subida is a member of the terredibeba association, which is committed to the gentle promotion of the region and the traditions of the Collio on both the Italian and the Slovenian side.

EnvironmentLa Subida pays attention to a sustainable approach and a careful life in nature, which is its greatest asset. On-site electricity is produced using solar panels and biomass. The electric vehicle affectionately known as "Beba" is available for transport on the site and its own waste water filter system has a positive influence on water consumption. The sun-yellow rental bikes are available to guests for excursions in the area, on the “Slow Collio” bike routes.

Well-BeingBuilt in the forest, La Subida brings its guests back to the originality of a life in nature. In addition, new creative well-being ideas are always offered. For example, there is the possibility in an antique enamel bath in the middle of man-high grasses and herbs to enjoy a warm or refreshing bath in the open air. A childhood dream can be fulfilled with a night on the airy hayloft and lulled to sleep in the four-poster bed by the soothing snort of the horses and woken up by the first twittering of the birds at sunrise. This sleep and awakening in the rhythm of nature and in connection with the aromatherapy of the fragrant hay brings all blood pressure back in order. Another highlight of the forest therapy of La Subida is the special offer night in the "Nido" - the "nest" only with bedroom and bathroom in the middle of a secret place in the forest, to which the guest after a solemn dinner in the trattoria through the darkness - exclusively barefoot - is headed.
