Gutshaus Linstow

Linstow, Mecklenburg-Vorpommern, Germany

The Linstow Manor House is picturesquely situated in the heart of Mecklenburg-Western Pomerania, surrounded by old, tall trees and a spacious park.

Franziska Hesse and Torsten Dietzel discovered the historic building, dating from 1735, by chance on a bike ride almost 20 years ago. After an extensive three-year renovation, the manor house has been restored to its former glory, combining historic features with modern comforts. Each of the seven rooms and four holiday apartments is individually designed, creating an atmosphere of peace and security. Guests can browse the library or relax on the terrace overlooking the greenery. It's a great place to strike up a conversation, and many guests return again and again during their vacations.

Cooking is done in the evenings on weekends. The large permaculture garden provides fresh fruit, herbs, and vegetables. The dishes—including vegetarian and vegan options—are prepared with creativity and love for the ingredients. Homemade fermented or dried products and preserves are an integral part of every dish.

The manor house serves as both a guesthouse and an integral part of the village community. It serves as a meeting place for village festivals, readings, concerts, and club meetings. For nature lovers, the surrounding area offers numerous opportunities, such as hikes, bike tours, boat trips on Lake Linstow, or forest bathing in Mecklenburg's largest forest area. Whether seeking enjoyment, relaxation, or inspiration, the Linstow Manor House offers its guests a unique experience.

Sustainable

ArchitectureBoth the architect and the owners wanted to preserve as much as possible. The work required artisans skilled in traditional techniques. Therefore, the house was extensively renovated using traditional materials such as wood, clay, seaweed, hemp, and cellulose. Particular emphasis was placed on preserving the original construction and spatial structure. Old windows were restored or rebuilt from wood based on historical models. Natural materials such as lime, curd, and pigments were used for the paint.

FoodThe kitchen uses fresh ingredients from the on-site permaculture garden. Herbs, fruits, and vegetables are harvested in season. Food waste is used sustainably, for example as feed for the chickens. Game comes from local hunters, and meat is almost exclusively organic. The dishes are often vegetarian/vegan and inspired by the available ingredients. Drying, fermenting, and preserving create a culinary experience that perfectly combines sustainability and enjoyment.

The employees come from the region. Fair working conditions, good cooperation, the transfer of personal responsibility and the possibility of co-determination should ideally lead to long-term

EnvironmentHeating is provided by wood and solar energy, supplemented by a heat pump. Laundry is done with ecological detergents, and all cleaning products are environmentally friendly. An electric charging station in the parking lot ensures an environmentally friendly journey. In the long term, an old orchard will be revitalized by planting climate-resistant trees. Piles of brushwood have been stacked in the park for protection and shelter for small animals, as well as to prevent dehydration.
