The Gandum Creek flows through the property, giving the farm its name. From the hotel, there is a beautiful view of the historic walls of Montemor-o-Novo Castle.
Gandum Village has a long history: The farm once belonged to a respected doctor who opened it to the local community and shared his water sources. After more than ten years of decline, the site was finally revitalized in 2018. The process was carefully implemented to preserve its original character. The existing buildings were renovated and a new building constructed using the traditional rammed earth technique—a sustainable construction method with a lower carbon footprint that ensures a pleasant indoor climate.
The property's restaurant focuses on fresh, local ingredients, while several pools and a special coworking space create a relaxed and inspiring atmosphere. The interior combines modern design with natural materials, reflecting the connection between city and countryside.The furniture and decoration are mostly sourced from small Portuguese designers, ensuring that every detail is individually and carefully selected.

ArchitectureGandum Village's new building was constructed using traditional rammed earth construction—a sustainable technique with a significantly lower carbon footprint compared to conventional methods. With 18 rooms and an arcade reminiscent of a historic monastery, it creates a tranquil and timeless atmosphere. Sustainability was also a key focus during the renovation of existing structures: as many original materials as possible were reused to preserve the character of the site and reduce waste. The earth used in the construction was sourced from the immediate area, minimizing transport routes and utilizing regional resources.
FoodGandum Village practices regenerative agriculture—without the use of pesticides or mineral fertilizers. Many of the small, local suppliers also work according to sustainable principles. Food waste is avoided as much as possible, and leftovers are put to good use, including as feed for the farm's animals. The seasonal menus reflect the freshness of the region—the chef selects what's ripe directly from the garden and creates creative dishes with traditional Portuguese influences. Particular emphasis is placed on regional ingredients; coffee comes directly from a regenerative farm in Brazil, and honey from the farm's own apiary is used instead of sugar.
The accommodation places great importance on hiring staff from the region and surrounding villages. Supporting the local community is a priority, which is why all employees are paid above minimum wage. They also benefit from special perks, such as discounts at the on-site restaurant.
EnvironmentBy planting more than 50,000 trees and working closely with the Dutch Life Terra Foundation, the project actively contributes to the restoration of natural landscapes and the promotion of biodiversity. Regenerative agriculture improves soil quality, while sustainable water management with a natural filtration system supports the responsible use of resources. Solar energy helps achieve a balanced energy balance, and environmentally friendly cleaning products minimize the ecological footprint. Restoring the riverbank also plays a central role in preserving the local ecosystem. A future carbon offsetting system is planned, allowing guests to offset their own carbon footprint by planting trees. Workshops and courses on sustainability are also planned to further raise awareness of environmentally friendly lifestyles.
