Brixen is one of the oldest towns in South Tyrol. Here, the history and culture of Tyrol merge with the Mediterranean way of life. The town centre is still shaped by the long reign of the bishops. Clerical buildings such as the cathedral square and the large monastery complex bear witness to this history. There are also picturesque arcades and small romantic alleys that invite you to stroll and explore.
One such discovery is the "Fink Restaurant & Suites" in the impressive building dating back to 1450. It has been owned by the Fink family, who used to run an inn here, for over a hundred years. Florian Fink took over the house from his parents in the fourth generation and, together with his wife Petra, completely modernized it in 2023. All aspects of ecology and sustainability were included in the renovation and thus form the basis of the new style. The holistic sustainability concept includes all details such as menus made of apple leather, table linen made of fabric, deposit bottles and the complete utilization of locally produced, predominantly plant-based foods.
The historic stone walls, vaults, bay windows and ceiling frescoes have been painstakingly restored. The antique structures have been complemented by modern elements such as timeless wooden furniture and high-quality natural materials. The puristic style and the unpretentious design always put the beautiful building in the spotlight. For additional relaxation, guests can use the in-house thermal baths. The spa area has a wooden sauna, steam bath, cold and warm water pools, a garden area and various relaxation zones.
In theory, you wouldn't even have to leave this beautiful gem, as there is also an excellent restaurant on site. Here, regional delicacies are served according to the principles of monastery cuisine using old recipes from Hildegard von Bingen. The beautiful ambience and very personal service ensure a sense of well-being everywhere. After an eventful day, you can sleep and dream in wonderful peace in one of the nine suites.

ArchitectureOnly sustainable and ecologically produced raw materials were used for the renovation and new furnishings: natural materials for the insulation, plaster and paints made from lime and quartz, which also make the character of the historic walls tangible, as well as local wood, preferably old wood. The furniture is made entirely of wood - including dowels and screws - and is therefore recyclable. The planning of the new townhouse pursued the goal of keeping daily operations as energy efficient as possible.
FoodOnly seasonal and regional food is served with products from the immediate area. An organic farm above Brixen grows produce for the hotel all year round. The menu is vegetarian and vegan. Meat and fish are also offered, exclusively from species-appropriate farming.
The team mostly comes from Brixen and the surrounding area and walks or cycles to work. Regular training courses and joint excursions are organized every two to three months. Surplus from the restaurant is delivered to monasteries, which donate food to those in need. Guests also have the option of foregoing housekeeping and donating a hot meal to those in need at Maria Hueber Brixen's food distribution center.
EnvironmentThe building only uses green electricity and the intelligent energy optimization throughout the building saves additional energy (peak avoidance through automatic shutdowns, motion detectors for the lights in the corridors, LED lamps throughout the building, sauna only switched on when in use). The underfloor heating is partly heated by kitchen exhaust air and cooling, and can be switched to cold in summer. The Roman hot water bath is also heated using this principle. In addition, all cleaning products are eco-certified. All water fittings have been selected to save water. Paper, cardboard and glass are of course recycled. The zero-waste principle applies in the kitchen and everything is recycled. The restaurant also has cloth napkins, grass paper straws and eco boxes to take away. Breakfast is not buffet style, but is served à la carte.
Well-BeingUse of the thermal baths is included for hotel guests. The entire area is a textile-free zone and reserved for adults. Bathrobes, slippers and towels are provided. The thermal baths are a place of tranquility in the middle of the city. Infusions with herbs from the Brixen monastery gardens fill all rooms with a pleasant scent.

From Innsbruck it takes just under 1.5 hours (85 km), from Milan just under 4 hours (314 km), from Venice it takes around 3.5 hours (306 km), from Zurich it takes around 4.5 hours (371 km) and from Munich it takes a good 3 hours (241 km). The train station in Brixen is only about 10 minutes from the hotel (900 meters). There is also a bus connection from there, the bus stop is only 3 minutes from the house.
