Haller Suites & Restaurant

Brixen, South Tyrol, Italy

The Haller is located in the northernmost wine-growing region of Italy and offers guests a wonderful view of the city of Brixen, as well as the surrounding mountains and vineyards. The house served as a farm for the Pichler family as early as 1955. In the 1990s, the farm was used as a guesthouse with a restaurant, at that time with 9 rooms. The house is now run by the 3rd generation of the family and, as a result of the new construction and renovation in 2019, a concept change with 18 suites and sustainability as the guiding principle. The hostess Teresa Pichler runs the Haller according to the motto: "Less sets you free and makes room for the important things in life". The hosts' goal is to not only give guests a relaxing holiday, but also to inspire them for new recipes or ways of seeing life. The interior design and furnishings of the suites are modern and at the same time traditional and nostalgic. The fabrics and colors used reflect the closeness to nature and the courage to change.

You can find the hosts’ favorite recipe in the kitchen whispers to cook at home.

Sustainable

ArchitectureThe house was integrated into the vineyard behind it through a terraced construction. This allows guests to live in the middle of the vineyard - a special architectural experience. During construction, care was taken to ensure that the suites fit perfectly into the landscape. The house is 100% South Tyrolean craftsmanship, as only regional partners were used. 70% of those involved come from within a radius of just 20 km. The house is located on the Sonnenberg in Brixen, but even if the sun shines strongly all year round, all suites can enjoy natural shade thanks to the pergola and terraced construction. This meant that air conditioning systems were not needed in the suites. In winter, the special construction also means that less heating is required. The Haller borders on a landscape protection project, which is why the architects had to meet strict requirements. Natural materials such as larch, wood and stone from the Eisack Valley in South Tyrol were used. The house was awarded the "KlimaHaus A" building standard (quality seal for residential buildings), which requires the use of natural and sustainable materials, such as vine leaves, in the interior. The renovation and refurbishment of the old building took place at the same time so that it could be converted to new heating systems.

FoodIn the kitchen in particular, attention is paid to short distances and seasonality: many dishes come from the region and the menu changes depending on the season. Meat, fish, dairy products and grains come directly from South Tyrol. When buying vegetables, we also work with passionate farmers who share the same standards and therefore do not use pesticides or fertilizers. Eggs only come from organic free-range farming. From spring, summer to autumn, it is possible to use vegetables from your own garden. When serving breakfast, in particular, care is taken to ensure that no waste is generated by asking each guest how hungry they are and what they like. This way, packaging material and 100% freshness and enjoyment can be guaranteed. The cooking style of South Tyrolean cuisine in the "Restaurant AO" can be described as modern, with the stories of the individual dishes being in the foreground. The slow food served is mainly about the appreciation of raw materials, with the dishes always being served in a purist manner and with a lot of creativity - so there is always healthy, homemade and handmade food. The menus include vegetarian dishes, but vegan options are not available as these do not fit with Haller's philosophy, as for them the cuisine of the Alpine region relies on animal products and thus also the surrounding farmers who are supported.

The employees at Haller are seen as part of a big family and are treated as such. They are offered a free place to sleep seven days a week and are also provided with meals twice a day. Meals are prepared together and eaten in peace, which strengthens the relationship and creates a special feel-good atmosphere that guests then also feel. As a relatively new establishment, not too many social projects have been supported, but there are some: for example, a certain amount is donated for each dish to an association that supports people from South Tyrol with severe communication impairments. Students from South Tyrol also have the opportunity to complete further training or apprenticeships at Haller. This is to be expanded in the future and, for example, to enable cooperation with refugee homes by allowing refugees to work at Haller. In addition, the company collaborates with regional craft businesses, artists and associations all year round and organizes exhibitions and events together.

EnvironmentSustainability determines pretty much every decision at Haller: It starts with a "healthy house", continues with the employees who walk to work, regional food or specially produced wine, so that the journey to the house can be kept as short as possible. In addition, guests are recommended to travel by train, although after arriving in Brixen they can change to the city bus free of charge and ultimately do not need a car to get there. E-bikes are also available to guests free of charge on site. Green energy for the KlimaHaus is provided by the district heating, which generates electricity and water through regional waterworks. The energy network systems store and recover heat generated during electricity distribution and use it to heat the water in Haller. The waste is consistently separated - all employees are trained in this regard.

Well-BeingThe Haller deliberately does not offer a classic indoor spa in order to keep electricity consumption as low as possible. However, the outdoor area with its beautiful garden is perfect for relaxing, as "wine wellness in the countryside", so to speak. In summer, yoga courses and Qi Gong lessons take place. Massages can also be booked on request. E-bikes are available to guests free of charge and can be used for long bike tours through the vineyards.
